Bourbon DODO blond
In reference to the Dodo, the now extinct bird of Mauritius, this Pils beer is the most consumed in Reunion, perhaps for its lightness. With only 5% alcohol, it is indeed suitable for all palates. Unless it's for its characteristic little taste, or even for the smile of the little animal that quenches all thirsts.Small local peculiarity: 95% of consumers prefer to order a bottled Bourbon rather than on tap. Born on June 9, 1953, the bottle changed names three times to finally be called “Bière Bourbon”. But in the hearts of Reunionese, only the Dodo makes reference. Moreover, the little bird is displayed in all the shops on the island. Malt and water: the raw materials of beer are simple.

Berry of Treasures Fruits of the Rains
The plot agricultural rum, Baie des Trésors, cuvée Fruits des Pluies is a rum bursting with generosity. To achieve this, Baie des Trésors has selected a plot a little further inland, and a little higher up, where the land near Habitation Dufferet is located. On these exposed slopes, the canes receive generous rains which they will revel in. Here the cane is prosperous, rich in juice, like a thick grass.It will give birth to round, generous and full of sweetness rums. Aging in French oak barrels, with little marked wood, will make it possible to melt the primary aromas well, to give length and aromatic power while allowing this generous nature to express itself.
Its complex and rich nose opens with an almost smoky vanilla woody note. It develops into candied fruits, dried fruits and dried flowers. A touch of blond tobacco accompanies the marshmallow which reveals itself with aeration. On the palate, the attack is supple. It is structured around ample and marked tannins. Dried fruits and candied citrus mingle with blond tobacco. The finish is fresh, aniseed.

The House of Rum Panama

Rum Secha de la Silva is an exceptional old rum from the volcanic jungle of Guatemala. It is distilled from the finest sugar cane and slowly aged in oak barrels. This rum is then infused with premium cocoa beans and aromatically rich coffees to add intense dark chocolate notes. The name means "the harvest of the jungle", intribute to the tropical forest, symbol of the natural wealth of Guatemala. On the nose, powerful cocoa notes are revealed first. Then, the coffee notes bring tonicity and give way to the woody side and notes of hazelnuts. On the palate, you will find aromas of stewed fruit and some subtle notes of mild tobacco that complement the empyreumatic notes. In the finish, the cocoa brings a nice indulgence while the coffee

Rum Arcane Extraroma
Distilled from freshly harvested and pressed cane juice, Arcane Extraroma “Grand Amber Rum” is an ageless rum that has managed to retain the freshness of sugar cane after aging for 12 years in solera. Rum DON PAPA 7 years old
Don Papa rum originates from the island of Negros in the Philippines where it is made from local molasses, renowned for its sweetness and richness. For those who don't know, if the Philippines is now one of the 10 largest sugar cane producing countries in the world, rum production only started there 150 years ago and was temporarily interrupted during prohibition. Don Papa rum is produced from the best canes of the archipelago.The molasses used in the manufacturing process of this rum is fermented before being column distilled. The aging of this Filipino rum is done at the foot of the Kanlaon volcano in old American oak barrels that have contained Bourbon. It is during this process that Don Papa 7 Year Old rum achieves the fruitiness of its aromas characterized by its persistent citrus notes. This 7 year old is part of a candied and pastry register.

Get 27
Get 27 is based on a recipe from the Get brothers dating back to 1796. At the time, they sought to create the perfect mint liqueur by mixing extracts from 6 different varieties of mint. Their method is still used today to flavor liquor. The number 27 meanwhile corresponds to the alcohol content of the original version, while the current liquor title only 21%. However, the name has not been changed so as not to confuse customers in the 122 countries to which the Get 27 is exported.
Genepi
Before becoming a well-known digestive in our French mountains, you should know that the origin of génépi liqueur dates back to the Middle Ages. It was only much later that genepi spread thanks to the production of monks like many liqueurs elsewhere. From the 19th century, genepi liqueur became commercial with the appearance of distilleries in the mountains of the Alps and more particularly in Savoie. The Domaine des Mapliers grapes are grown with respect for nature. The soils are treated naturally by mechanical and manual processes. Only organic products are used for the treatment of the vine. No pesticides and herbicides. The estate is in the process of obtaining an ORGANIC label.Bright intense purple color with purple reflections, ruby sparkles. The first nose opens with fresh vanilla on a background of gray pepper. The second nose asserts itself with notes of garrigue and fresh black fruit, Burlat cherry. The mouth is frank, the numerous, fine and silky tannins which give the wine a beautiful solid and firm structure on a great finesse of aromas, violet, juniper and Sichuan pepper. MENTONE Emotion blanc - AOP 2021 Côtes de Provence Bio
Grapes: Rolle 100%Terroirs and vines: The oldest plots of the estate (25 years on average) on clay-limestone soils located between 250m and 300m in altitude in a circle of hills.
Viticulture: The soils and the vines are worked in compliance with the organic ECOCERT specifications.
Manual harvesting and sorting.
Vinification: Destemming and crushing then direct pressing. Stabilization then natural clarification at low temperature.

A great Cuvée de Cheval Quancard made from grapes selected on the plot and vinified in oak barrels (two-thirds renewed each year) for 6 months. The first bottles are available in May, following the harvest. Emphasis is placed on Sauvignon (70%), Sémillon (20%) and Muscadelle (10%).
Grapes: 10% Muscadelle, 70% Sauvignon, 20% Semillon, 10% Muscadelle.
Pairings: Serve as an aperitif, with fish (smoked salmon, turbot with white butter sauce, fillet of sole), seafood (scallops), shellfish (langoustines), or cheese (Beaufort, Roquefort, Reblochon) .

UBY ColombSauv N°3 - vin de pays 2021 Côtes Gascogne
A nice intense nose of exotic fruits and citrus fruits with a lively and frank attack opening onto a gourmet palate with lemony notes and a nice length in the mouth.It is a wine for sharing par excellence, expressive, fine and easy to drink. Ideal around a tapas aperitif, a seafood platter, a raclette... But always chilled (serving temperature: 10°C). Unpretentious, but so pleasant to drink!
The vines are grown on sandy loam and clay soil. The yield is average for these vines with a yield of 80 hecto-litres per hectare. This Domaine Uby n°3 is made with 80% Colombard and 20% Sauvignon. The harvest is carried out at night, the maceration is pellicular, pneumatic pressing. Fermentation takes place at low temperature and aging on fine lees.

What is rum made with?
Whether we are talking about Rum, Rum or Ron, it is always about the same alcohol based on molasses from sugar cane. We are going to look at its history, its manufacturing processes as well as rum-based cocktails.

The making of rum
Sugar cane as a raw material
Impossible to talk about rum without mentioning sugar cane grown in tropical and subtropical regions. The flavors of rum will vary fundamentally depending on whether it is produced from vesou (cane sugar juice) or molasses (resulting from the refining of cane juice, thick and viscous syrup).
The fermentation of rum
The cane juice, or molasses, is left to ferment, resulting in an alcohol called “cane wine”. This step is essential to define the aromatic profile of the rum.
There are 3 types of fermentation:
• spontaneous fermentation with native yeasts, in open-air vats, for 1 to 2 weeks, practiced in small distilleries, as in Haiti
• controlled fermentation (in batches) with chemical yeasts for 2 to 3 days, guaranteeing a style unique to the brand
• fermentation continues in a fermentation tank always full of molasses, so that the yeasts are constantly active, thus maintaining the aromatic power
How is rum distilled?
The distillation of rum can be carried out in a column still or a pot still. The choice of still depends on the colonial history of the country!
- Batch distillation, a traditional method, consists of interrupting the still after the double distillation, to clean it and let it rest. This method produces rich, concentrated rums.
- Column (continuous) distillation consists of feeding two to four distillation columns without interruption and produces lighter rums.
