PhoenixSince its launch in 1963, PHOENIX beer has always held an important place in the hearts of Mauritians. Brewed on site by Phoenix Beverages Limited, it is also on sale on Reunion Island
A symbol of conviviality and friendship, it brings together people from different backgrounds (Mestizo, European, Asian, etc.) Its slogan "Nou tou ansam!" (We all together in Mauritian Creole) "Our country, our beer"
The quality of the underground water and the malts and hops used make it possible to produce this beer without preservatives.
EYE: Pale yellow color with a fine white foam of medium hold
NOSE: Flavors of roasted malts/Spring barley
MOUTH: Low bitterness & cereal notes that give a sweet but fragrant flavor
FINAL: Dry flavor in the end for this light & thirst-quenching beer
Bourbon DODO blondIn reference to the Dodo, the now extinct bird of Mauritius, this Pils beer is the most consumed in Reunion, perhaps for its lightness. With only 5% alcohol, it is indeed suitable for all palates. Unless it's for its characteristic little taste, or even for the smile of the little animal that quenches all thirsts.
Small local peculiarity: 95% of consumers prefer to order a bottled Bourbon rather than on tap. Born on June 9, 1953, the bottle changed names three times to finally be called “Bière Bourbon”. But in the hearts of Reunionese, only the Dodo makes reference. Moreover, the little bird is displayed in all the shops on the island. Malt and water: the raw materials of beer are simple.
Pressure ClamorClamor is a French beer.
It is a light and festive blonde. A mellow beer, predominantly malty, perfectly smooth on the palate.

Berry of Treasures Fruits of the RainsThe plot agricultural rum, Baie des Trésors, cuvée Fruits des Pluies is a rum bursting with generosity. To achieve this, Baie des Trésors has selected a plot a little further inland, and a little higher up, where the land near Habitation Dufferet is located. On these exposed slopes, the canes receive generous rains which they will revel in. Here the cane is prosperous, rich in juice, like a thick grass.
It will give birth to round, generous and full of sweetness rums. Aging in French oak barrels, with little marked wood, will make it possible to melt the primary aromas well, to give length and aromatic power while allowing this generous nature to express itself.
Its complex and rich nose opens with an almost smoky vanilla woody note. It develops into candied fruits, dried fruits and dried flowers. A touch of blond tobacco accompanies the marshmallow which reveals itself with aeration. On the palate, the attack is supple. It is structured around ample and marked tannins. Dried fruits and candied citrus mingle with blond tobacco. The finish is fresh, aniseed.

MARSHMALLOW BLOND TOBACCO
Clément Aged Agricultural RumThis Clément old agricultural rum comes from the distillation of only sugar cane juice. It is produced at Habitation Clément by alternating the use of new and older barrels during the aging period. Its spicy, woody, empyreumatic and roasted aromas give it good roundness and good balance.
Rhum Vieux Agricole Clément can be enjoyed as a dry aperitif, on ice or in a cocktail...
The House of Rum PanamaThis old rum representative of the Hispanic tradition comes to us from Panama: it has aged three months in barrels of Palo Cortado, a rare and precious variety of Sherry.
If its aromas are oriented towards citrus fruits and wood, it reveals flavors of cooked fruit, vanilla and cinnamon on the palate, before ending on a hint of Muscat.
A beautifully rounded rum, which is an excellent introduction to the Discovery range!
Rum Gold of MauritiusGold of Mauritius Dark Rum is a traditional column-distilled molasses rum, then aged in South African barrels (Cape region to be precise) that previously hosted Port. It is finally bottled without filtration.
Kill devilMade from old agricultural rum from Martinique, vanilla and slightly sweetened before being aged for 6 months in Bourbon barrels. The result is a round and suave rum with powerful notes of vanilla, red fruits and a smoky side brought by the breeding.
There are other flavors:
- Nice olive
- Festive flavor
De La Silva Secha RumRum Secha de la Silva is an exceptional old rum from the volcanic jungle of Guatemala. It is distilled from the finest sugar cane and slowly aged in oak barrels. This rum is then infused with premium cocoa beans and aromatically rich coffees to add intense dark chocolate notes. The name means "the harvest of the jungle", in
tribute to the tropical forest, symbol of the natural wealth of Guatemala. On the nose, powerful cocoa notes are revealed first. Then, the coffee notes bring tonicity and give way to the woody side and notes of hazelnuts. On the palate, you will find aromas of stewed fruit and some subtle notes of mild tobacco that complement the empyreumatic notes. In the finish, the cocoa brings a nice indulgence while the coffee
expresses a good length in the mouth, thus extending the side
toasted and roasted.
Rum DiplomaticoDiplomático Reserva Exclusiva is a blend of exclusive rum reserves, carefully selected by our Maestros Roneros. The marriage of a unique body and excellent balance has made this multi-award winning rum a reference for connoisseurs and lovers of fine spirits around the world. Opening with aromas of orange peel, caramel and licorice, it is smooth on the palate, and continues with notes of melting caramel that offer a seductive and long finish.
Mount Gay RumMount Gay rum is nicknamed 1703 in reference to the year of creation of the distillery on the island of Barbados.
Rum Beach house MauritiusBorn on the beaches of the Indian Ocean, Beach House rum is a spiced rum with an endearing style. Its first originality is to be made with an excellent rum from Mauritius, a land known for offering its rums naturally peppery and spicy tones. At the tasting this spiced rum surprises with its freshness, its exoticism and its relaxed style, easy to appreciate. A spiced as we like them when the weather is nice, to sip comfortably in the shade of a terrace.
Tasting notes: The color is golden with beautiful orange reflections.
On the nose, aromas of blood orange and honey dominate, then notes of lime and candied ginger gradually reveal themselves.
Taste The flavors of cane juice blend happily with orange blossom. At the end of the mouth, the slightly peppery notes give punch to the whole.
Rum Arcane ExtraromaDistilled from freshly harvested and pressed cane juice, Arcane Extraroma “Grand Amber Rum” is an ageless rum that has managed to retain the freshness of sugar cane after aging for 12 years in solera. Thanks to the long years spent in oak barrels, the rum also shows great maturity through its suppleness, complexity and aromatic richness.
Her robe is pale gold. On the nose, we immediately realize that we have an atypical rum in front of us. The aroma that we detect right away is that of the banana. The sweet side is reinforced by notes of English candy and vanilla.
On the palate, we stay on the same profile with an omnipresent banana, which is followed by more discreet pastry aromas. Overall, this is a rum that offers a lot of smoothness.
The finish is long, on… banana but also vanilla. A touch of wood makes this finish more complex and a little drier.
Rum DON PAPA 7 years oldDon Papa rum originates from the island of Negros in the Philippines where it is made from local molasses, renowned for its sweetness and richness. For those who don't know, if the Philippines is now one of the 10 largest sugar cane producing countries in the world, rum production only started there 150 years ago and was temporarily interrupted during prohibition. Don Papa rum is produced from the best canes of the archipelago.
The molasses used in the manufacturing process of this rum is fermented before being column distilled. The aging of this Filipino rum is done at the foot of the Kanlaon volcano in old American oak barrels that have contained Bourbon. It is during this process that Don Papa 7 Year Old rum achieves the fruitiness of its aromas characterized by its persistent citrus notes. This 7 year old is part of a candied and pastry register.
Rum PomperoPampero Especial old rum invites you to explore new horizons with its flavors inspired by the Caribbean coast of Venezuela. Triple distilled, the spirit is then aged in Bourbon barrels, which harmonizes the flavors with the sweetness of vanilla. Generous in aromas, it offers a sweet and creamy taste thanks to honey and fruit, supported by woody notes.
Rum BUMBUBumbu is an artisanal rum produced on the island that is nicknamed 'The Cradle of Rum': Barbados. Developed within the distillery 'The West Indies Rum Company', its composition carefully follows the original and historical recipe of the first spiced rums, dear to the Caribbean.
Saint James RumSaint-James Royal amber rum is THE top-of-the-range reference for dark rums aged in barrels.
Turquoise Bay RumTurquoise Bay is an original creation, from Mauritius and initiated by Thibault de la Fournière, president of the spirits company Ôdevie.
The blend of traditional rums aged 3, 5 and 8 years - to which was added a hint of pure cane juice rum - was finished in French and American oak barrels.
Its dress displays a beautiful golden hue nuanced by mahogany reflections.
Generous and delicately spiced, it reveals aromas of wood, sugar cane and sweet spices.
Charm and warmth. The tasting reveals a pastry register which is accompanied by beautiful woody notes and, by touches, of blond tobacco.

AmarettoAmaretto Disaronno is one of the most famous Italian liqueurs. It comes from the town of Saronno in Lombardy, where its recipe was created in 1525. This secret formula includes almonds (apricot kernels) and other fruit kernels.
BaileysBailey's comes from the happy marriage of Irish cream, fine spirits, Irish whiskey and natural cocoa essences. Baileys has carried on the tradition of innovation and craftsmanship associated with the production of alcohol in Ireland since the 7th century. The tradition and the quality, well known from the distilleries of Ireland allowed this happy marriage between cream and whiskey.
Get 27Get 27 is based on a recipe from the Get brothers dating back to 1796. At the time, they sought to create the perfect mint liqueur by mixing extracts from 6 different varieties of mint. Their method is still used today to flavor liquor. The number 27 meanwhile corresponds to the alcohol content of the original version, while the current liquor title only 21%. However, the name has not been changed so as not to confuse customers in the 122 countries to which the Get 27 is exported.
GenepiBefore becoming a well-known digestive in our French mountains, you should know that the origin of génépi liqueur dates back to the Middle Ages. It was only much later that genepi spread thanks to the production of monks like many liqueurs elsewhere. From the 19th century, genepi liqueur became commercial with the appearance of distilleries in the mountains of the Alps and more particularly in Savoie. It was clearly the craze for ski resorts that made genepi liqueur famous and emblematic of the French mountains.

History of Rum
What is rum made with?
Whether we are talking about Rum, Rum or Ron, it is always about the same alcohol based on molasses from sugar cane. We are going to look at its history, its manufacturing processes as well as rum-based cocktails.
The main producing regions
The Caribbean with Cuba, Haiti, Dominican Republic, Puerto Rico, Barbados, Jamaica, Trinidad & Tobago, Antigua, Barbados, Virgin Islands, Saint Lucia Latin and Central America with mainly Guatemala, Nicaragua, Panama, Guyana, Venezuela , Brazil, Peru and Argentina The DOM-TOM with Martinique, Guadeloupe, Marie-Galante and Haiti, Madagascar, Mauritius and Reunion Island.
The making of rum
Sugar cane as a raw material
Impossible to talk about rum without mentioning sugar cane grown in tropical and subtropical regions. The flavors of rum will vary fundamentally depending on whether it is produced from vesou (cane sugar juice) or molasses (resulting from the refining of cane juice, thick and viscous syrup).
The fermentation of rum
The cane juice, or molasses, is left to ferment, resulting in an alcohol called “cane wine”. This step is essential to define the aromatic profile of the rum.
There are 3 types of fermentation:
• spontaneous fermentation with native yeasts, in open-air vats, for 1 to 2 weeks, practiced in small distilleries, as in Haiti
• controlled fermentation (in batches) with chemical yeasts for 2 to 3 days, guaranteeing a style unique to the brand
• fermentation continues in a fermentation tank always full of molasses, so that the yeasts are constantly active, thus maintaining the aromatic power
How is rum distilled?
The distillation of rum can be carried out in a column still or a pot still. The choice of still depends on the colonial history of the country!
- Batch distillation, a traditional method, consists of interrupting the still after the double distillation, to clean it and let it rest. This method produces rich, concentrated rums.
- Column (continuous) distillation consists of feeding two to four distillation columns without interruption and produces lighter rums.
How is rum aged?
