The vine is one of the oldest and most characteristic of the Lessini Mountains and is characterized by a strong natural acidity. For this reason, since 1985 Guerino has chosen to focus its activity on the exclusive production of Classic Method Sparkling Wines and to embrace the principles of organic agriculture. To date, the management of the company has passed into the hands of Tanita Danese, a young farmer who has been linked for some time

75 cl : 85.00 €

Trebbiano Viti Dimenticate 2019-20 Colli Toscana Igt Centrale - Monteraponi

VD Trebbiano di Monteraponi comes from vineyards cultivated according to an organic farming method, covering an area of 12 hectares. The Campitello and Baron'Ugo vineyards are made up of vines aged over 40 years, located at an altitude between 420 and 570 meters above sea level. Following the harvest, the grapes are transported to the cellar where only 50% of the bunches are de-stemmed. A minimum maceration time of 48 hours precedes the actual alcoholic fermentation, which is triggered spontaneously by the action of indigenous yeasts. The last phase of fermentation takes place in barrique. Once finished, the refinement phase begins in contact with its own fine lees, carried out equally in new and exhausted barrels from Burgundy and Austria. This is followed by a further passage inside concrete tanks and a subsequent bottling not preceded by filtration

“As soon as I founded in 1988, the estate was converted to organic viticulture. This choice was obvious because biology is in our eyes the most beneficial agriculture for everyone. The vine is grown, without chemical fertilizers, herbicides, pesticides or synthetic fungicides, on soils fertilized exclusively with composted manure and organic modifications such as horn (rich of nitrogen) and composite fragmented wood (BRF). The work carried out in the vineyard, on the ground, on the stems and on the fruits guarantees a good quality of the grapes during the harvest. The company is managed by Diego Finocchi, who personally takes care of all the activities, from the pruning of the vineyard to the marketing of the wine. Alcoholic fermentation takes place without the use of selected yeasts. The racking is decided after tasting, on average the maceration lasts from 25 to 30 days. Spontaneous fermentation takes place in vitrified concrete tanks, without temperature control and without the addition of yeasts. In our Chianti heart, "Pian del Ciampolo" is the wine we all dream of producing. The Territory is Radda; center of gravity of the Chianti Classico appellation, from which (rightly) Montevertine came out. The altitudes range between 400 and 600 meters with steep slopes and looming woods and the lands are made up of a multitude of soils; clays, sands, light limestone silt. A stretch of Burgundy in the Chianti Classico !! Talking about how it is made is definitely superfluous: after fermentation for about 25 days, the wine has a period of aging in Slavonian oak barrels and cement for another year!

He came to Radda for an internship and spent many years in Riecine, a historic producer of Chianti Classico. Since 2012 Sean has been collaborating with Karl Egger, an Austrian pipe industrialist who fell in love with Tuscany and bought houses and vineyards, creating the biodynamic and organic winery Tenuta di Carleone. From the “Mello” cru in Gaiole in Chianti, 700 m above sea level, the grape harvest is slightly delayed to obtain maximum maturity. The very long maceration then gives it a wonderful fruity character, which differentiates it from the more classic styles. A sublime, infinite and exciting sip.

Podere della Civettaja is the concrete realization of Vincenzo Tommasi's daydream - considered by many to be more of a madness - to give life in Tuscany, in the valleys of the upper Casentino, to expressions of Pinot Noir in full French style.

At Podere della Civettaja we love to take risks. Vincenzo started the current 3 hectares of vineyard embracing the dictates of organic farming, committing himself to vinify each particle individually and then, only later, to assemble them. He then worked hard to inaugurate a practice as artisanal as possible in the cellar: manual sorting of the grapes, spontaneous fermentation in open wooden vats, clarification only by decanting in cement and manual capping. The Pinot Noir of Podere della Civettaja is much more than a simple wine, it is the liquid personification of Vincenzo Tommasi and his thirst for Burgundy.

The Podere Santa Felicita project was born from the hands of the agronomist winemaker Federico Staderini; right in the Casentino, he found the most suitable territory for growing Pinot Noir. We are 500 meters above the sea and the vines grow on calcareous soils. The bunches are not de-stemmed and are placed in open vats where fermentation starts naturally after 5 or 6 days thanks to indigenous yeasts. Alcoholic fermentation is therefore spontaneous and maceration lasts until it breaks. After racking, the wine is transferred to one-year French oak barrels for 18 months where it undergoes malolactic fermentation and is put on the market one year after bottling.
