Welcome to Los Cuates! You are NOT in a classic restaurant with "starter, main course and dessert"...

...With us, only small plates placed in the center of the table to share and enjoy, alone or with others.

Our taqueria offers traditional Mexican cuisine around the corn tortilla, whether it is available in totopos, quesadillas or tacos, we invite you to dive into the Mexican gastronomic universe!

How it works?


In order to immerse you in our Mexican universe, we have provided you with tablets to present our proposals to you as well as possible.

You will be able for each dish to look at the explanation, the photo and the specificities of the dishes which interest you and order them directly via the tablet....

What are tacos?

"Cochinita pibil" is a traditional Mayan dish made with slow-roasted pork originating from the Yucatán Peninsula. The preparation of the traditional cochinita consists of marinating the meat in strongly acidic citrus juice, adding annatto seeds, which give a bright orange color and roasting the meat wrapped in a banana leaf.

Al pastor is a popular cooking method all over the country. This method is reminiscent of the one used for making Middle Eastern kebabs or shawarma.
Pastor means "shepherd" in Latin, which therefore originally means "meat cooked in the manner of shepherds".
The pork is marinated with a mixture of peppers, spices and pineapple before the whole thing is flame-cooked on a vertical rotisserie. Once cooked, the pork is cut into thin slices and placed on small corn tortillas and served with onions and cilantro, with a drizzle of lime and salsa.

Carnitas are made by braising or simmering pork in its fat to tenderize it. The process takes three to four hours, and the result is tender, juicy meat.

The traditional way to cook carnitas is to use a copper pot which distributes the heat evenly in a process quite similar to confit. Lard is used to simmer the meat. Once the latter has melted, the pork and herbs are added (salt, chilli, cumin, Mexican oregano, marjoram, thyme, bay leaf, crushed garlic, and clove of cloves). The meat must then be cooked over a very low heat. Once cooked, it can be chopped ... even with a fork!

Tequila is a brandy produced in Mexico exclusively from a plant called Agave tequilana (unlike mezcal which can be produced from other species of Agave).
To obtain the appellation "tequila", the production must take place in the State of Jalisco in the geographical area of Tequila!
Originally, the Mesoamericans did not know the process of distillation and the only alcoholic drink they got from agaves was low-alcohol pulque.

The Spaniards, in search of a stronger eau-de-vie, introduced the process of distillation in the 17th century.
The arrival of the train in Mexico allowed the tequila industry to expand to other destinations. Gradually, tequila passed from the status of a regional or local product to that of a national product, then an international one in the second half of the 19th century.

This Tequila is named after the year 1800, when the first matured tequila was produced. The Jose Cuervo distillery produces tequila, still according to the original recipe, using only the hearts of blue agaves that have been growing for eight years. These are previously fired in brick ovens. Tequila 1800 Reposado matured for six months in American and French oak barrels. It is recommended to serve it "on the rocks", or as a component in cocktails, such as Tequila Sunrise, Paloma and Margarita.
